This is a very classic bruschetta recipe that uses fresh ingredients like basil, garlic and cherry tomatoes. An easy recipe to follow with delicious results. Perfect to make as a party appetizer or a stand-alone meal if you so choose. Enjoy!

Ingredients
- 1 ciabatta loaf of bread (or a French baguette)
- 6 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup of fresh basil, chopped finely
- 1 cup of cherry tomatoes, diced
- Salt and pepper to taste
- 2 tbsp balsamic vinegar
- 1 cup of shredded mozzarella cheese, optional
Cooking Instructions
- Pre-heat oven to 350°C degree
- Slice loaf of bread down the centre vertically, cutting the loaf into two halves
- Cut each half into 3 even pieces (total pieces should be 6)
- Pour olive oil onto a plate
- Take each piece of bread and gently dip the top part into the olive oil to cover the entire surface
- In a mixing bowl, toss together cherry tomatoes, basil, garlic, salt and pepper
- Lay each piece of bread on a baking sheet and scoop equal amounts of bruschetta mix on top
- Drizzle balsamic vinegar on top of each piece
- Sprinkle shredded cheese on top (optional)
- Bake for 15-20 minutes and serve immediately.
Note(s): You can modify the amount of bread or bruschetta mix based on the serving size you’d like to make. This recipe yields 6 servings.
